Thanks for sticking around and coming along for the unpredictable ride of Foodie Fridays! I’ve missed a handful of Fridays over the past several months, but what can I say? Life just happens. So thank YOU for always coming back!
What is your normal breakfast routine like? I’m not usually the type of person who likes to have the same meal multiple times a week let alone on consecutive days. However, breakfasts are an exception. I really think it’s because it’s too early to be picky, speaking for myself.
Our normal breakfast consists of my oat milk latte, hash browns , 1 piece of bacon, and 1 sunny side egg. Sometimes I’ll switch it out for a breakfast bowl or change up the protein to sausage patties. From time to time, I’d even to breakfast tacos or burritos—if I planned it the night before.

I usually buy frozen hash browns (shredded potatoes). My favorite brand is Ore-Ida, but sometimes I would just get Trader Joe’s or Whole Foods 365 branded shredded hash browns. I always have 2-3 bags sitting in the freezer. We go through them pretty quickly since we have it pretty much every morning.
This week, I ran out…but I had a few potatoes left over from last week so I decided to shred my own. Turns out, it’s even better than any hash browns I’ve ever had in my life. Seriously game changer!

The shreds came out much thinner than any frozen brand I’ve tried before so it cooked a little faster and it was crispier! Oh my goodness, it is heaven on a plate!

Peel and wash any potato or your choice. Grate/shred. Wash and rinse the shredded potatoes in water a few times. Drain out as much water as possible. Oil a pan. Don’t be stingy on the oil. Throw the potatoes in with a little bit of salt and put the lid on for a few minutes. Remove lid and add a little more oil if you need to and cook until browned. Then flip. Add more oil, if necessary. Serve when crispy. I usually shoot for 1 medium sized potato per person.

Served alongside some bacon and eggs and I’m a happy gal! Although it sounds like a lot of work so early in the morning…I promise, it’s totally worth it!!
